Mocha Banana Ballz Apogee Spirulina Blog Recipes

These energy balls, loaded with protein, healthy fats and fibers, will defend you against blood sugar lows. A few of these for a snack will keep you set until dinner.
They are much lighter then our Vegan Chocolate Spirulina Balls, we switched out some of the nuts for pre-cooked lentils. Yes, that’s right, red lentils. You got to try it!

Mocha Banana Energy Ballz
Prep Time: 5 mins | Cook Time: 25 mins | Total Time: 30 mins
Makes about 20 balls

INGREDIENTS:
1/2 cup red lentils, pre-cooked
1 cup of nuts and seeds
10-12 pitted dates (we used organic Halawi dates which is a bit smaller then deglet noor dates)
1/2 banana
2 tsp cacao powder
2 tbsp chocolate nibs
1 tbsp spirulina sprinkels
1/2 tsp vanilla extract
3/4 cup almond flour
1/4 cup oatmeal (add more if the ball dough is too moist)
More or less A shot of espresso (be careful to not add too much)

DIRECTIONS:
Take all the ingredients and blend together in a food processor. It should be able to stick together when you squeeze it. If it’s too wet, add a bit more of the oatmeal or almond flour. Press into balls and roll in the coconut or cacao powder. Refridgerate or freeze. Keeps for 2 months in the freezer.
