Spirulina Chia Pudding

It takes minutes to make and has enough protein and nutrients to be a quick, on-the-go breakfast or a delicious dessert. You can change the flavour, the texture, the sweetener, the colour and practically any other part of the recipe. Chia pudding textures can be a bit hard to get right. The best ratio is two tablespoons of chia seeds to one cup of liquid. You could absolutely use any (dairy-free) other milk, too, like almond or cashew milk.

Ingredients:
2 cups coconut milk
1/2 cup Chia Seeds
1/2 teaspoon vanilla extract
1/2 cup fresh/frozen Strawberries (or any other berry or fruit)
1 Tbsp Cacao Nibs
1 Tbsp Apogee Spirulina Crunchies
1 teaspoon raw honey or pure maple syrup (sweeten to taste)

Directions:
1. Blend all ingredients together except the chia seeds.
2. Mix chia seeds into the blended mixture.
3. Place the entire mixture into a glass container in a fridge overnight or at least 4 hours.
4. When ready to enjoy, garnish with some fresh fruit, shredded coconut or maybe cacao nibs.
